This photo is of a cake I recently made for a very special celebration. I really loved making this cake and I have a little of the beautiful raspberry and strawberry coulis left over. I thought, why not make a mini version and just do two layers so that everyone can have their own celebration?
This cake is made up of two 20cm round layers of a butter sponge sandwiched together with a swiss meringue buttercream and a berry coulis. Celebrate elaborately or don’t celebrate anything at all. Just eat cake.
Ingredients: butter, sugar, flour, baking powder, salt, milk, eggs, strawberries, raspberries, lemon.
